Research Fellow – Nutritional Composition and Digestibility Lab (NCDL)
School of Biosciences, Sutton Bonington Campus

Full-time, fixed term for 8 months

Applications are invited for a Research Fellow to join the Nutritional Composition and Digestibility Lab (NCDL) at the University of Nottingham Sutton Bonington Campus. This fixed term post is part of a project funded by the BBSRC Biofortification Hub, delivered in partnership with Adamo Foods, to develop iron-biofortified fungal mycelium for human nutrition.

The role will involve using the INFOGEST static in vitro digestion system to determine iron bioaccessibility and amino acid digestibility for protein quality estimation, alongside Caco-2 cell models to assess iron uptake. The successful candidate will work with fermentation scientists at Adamo Foods to optimise fermentation parameters to enhance fungal biomass yield and nutritional quality, and apply advanced analytical, microscopy, and cell culture techniques.

Candidates should have a PhD (or equivalent) in food science, nutrition, or a related discipline, with experience in in vitro digestion, specifically using the INFOGEST static digestion model, nutritional analysis (minerals, proteins/amino acids and fibre), and techniques in examining food structure. Experience with cell culture methods is desirable. Strong communication skills, initiative, commitment to the project and the ability to work collaboratively are essential.

Hours: Full-time (36.25 hours per week)
Location: Sutton Bonington Campus, University of Nottingham

This is a fixed term full time 8 month post available to start beginning of November 2025.
